Zain's Vegan Pie Oatmeal

What could be more delicious than combining the flavours of your favourite baked pies with your morning oatmeal? As the fall weather rolls in and mornings are darker and chillier than before, these four pie oatmeals will keep you cosy, nourished and warm.
Below are the recipes for my four signature flavours based on my favourite pies: Apple Pie, Pumpkin Pie, Strawberry Rhubarb and Pecan Pie! These gluten-free, vegan oatmeals taste delicious and are packed with clean, nutrient dense ingredients that will keep you full for hours.
Although my recipes call for baking your oatmeal, I have also provided instructions for regular stovetop oatmeal. If you have never tried baked oats before, I highly recommend it. It's like diving into a warm oatmeal pie/cookie.
**Note, I also add 1 Scoop Sunwarrior Vanilla Protein Powder to this recipe for an extra protein boost! You may choose to add any vegan protein that you wish.
Zain's Vegan Apple Pie Oatmeal
Ingredients:
1/2 Cup Organic Slow Cook Uncontaminated Oats
1 Organic Apple (chopped)
1/4 Cup Apple Butter OR 1/2 Cup Unsweetened Applesauce
1/2 Tsp Cinnamon
1/4 Tsp All Spice
1/4 Tsp Natural Vanilla
1 Tsp Organic Almond Butter
1/2 Tsp Fresh Ginger (minced)
5-10 Drops Vanilla Creme Stevia OR 11/2 Tbsp Maple Syrup
1/8 Cup Unsweetened Vanilla Almond Milk (increase to 1/4 cup if using stovetop)
1 Tbsp Organic Walnuts
Cooking Spray
Directions for Baked Oatmeal:
1. Preheat oven to 375 degrees.
2. Combine raw oats, spices, apple butter/applesauce, vanilla, stevia/syrup and almond milk.
3. Pour into a sprayed baking dish.
4. Cook for 20-25 minutes or until it gets firm.
5. Increase oven temp to broil for 3 minutes or until desired crispiness is obtained.
Directions for Stovetop Oatmeal:
1. Bring 2 cups water to a boil, add oats reduce heat and simmer until fully cooked then add remaining ingredients and allow to cook for 2-3 mins. Top with extra walnuts if desired.
Zain's Vegan Pumpkin Pie Oatmeal
Ingredients:
1/2 Cup Organic Slow Cook Uncontaminated Oats
1/4 Cup BPA Free Canned Pumpkin
1/2 Tsp Cinnamon
1/4 Tsp All Spice
1/4 Tsp Nutmeg
1/2 Tsp Ginger (minced, optional)
1/4 Tsp Natural Vanilla
5-10 Drops Vanilla Creme Stevia OR 11/2 Tbsp Maple Syrup
1/8 Cup Unsweetened Vanilla Almond Milk (increase to 1/4 cup if using stovetop)
