The following foods are high in the antinutrient oxalic acid. When eating more than minimal or sporadic amounts of these foods, they are best cooked in order to maximize nutrient bioavailability. Also for this reason, it is not ideal to routinely add these raw foods to fresh juices: beet greens, beet root, purslane leaves, spinach, Swiss chard, parsley, endive, dandelion greens, kale, collard greens, Brussel sprouts.
