This hearty breakfast wrap recipe is full of protein to give you balanced energy. You can also use sprouted grain tortillas. You may wish to substitute plain yogurt for the sour cream. Use organic ingredients wherever possible.
Serves: 2
Preparation time: 10 minutes
Ingredients:
5 egg whites, scrambled (free range if possible)
½ cup heated veggie crumbles or veggie ground round
½ cup cheddar or soy cheese, shredded
Green onions, chopped, to taste
½ avocado, sliced
½ tomato (fresh, medium sized)
2 whole wheat or spinach tortillas
Salsa to taste
Sour cream (optional)
Instructions:
Stir the first six ingredients together.
Heat tortillas on a dry skillet for approx: 30 seconds each side
Scoop half the filling mixture into each tortilla and roll like a burrito.
Enjoy.
