Mediterranean Quinoa Salad

Quinoa is a definite staple in my kitchen! This simple salad using leftover quinoa is super fast and easy to make. Plus you get the benefit of energizing B vitamins, muscle-relaxing magnesium, and blood-sugar-balancing fibre. What’s not to love?
Ingredients:
2 cups cooked white quinoa
1 cup grape tomatoes, halved
½ cup cucumber, diced
½ cup black olives, pitted and chopped
½ red bell pepper, diced
¼ cup feta cheese, crumbled
2 tbsp extra virgin olive oil
½ tsp sea salt
Pinch fresh ground black pepper
Pinch cayenne pepper
1 tsp dried oregano
Juice of ½ lemon
Directions:
Add all ingredients to a bowl and mix well.
