This delicious recipe can be enjoyed with tortilla chips or on a sandwich or tacos. Also great on a veggie burger or a breakfast wrap. If you normally use sour cream, in such dishes, try substituting with plain yogurt.
Ingredients:
1/3 cup finely chopped onion
juice of one lime
1 tsp minced green jalapeno *Remove and discard seeds*
1/3 cup chopped cilantro
Pinch salt (to taste)
½ cup chopped tomatoes
2 ripe avocados
Mulch chilies, onion, cilantro, lime juice with a mortar and pestle for approx 1 ½ minutes.
Peel mash avocados. (remove seeds). Mix in tomatoes.
Add jalapeno/onion/lime mixture.
Blend gently until ingredients are combined.
Garnish with a sprig of cilantro.
