Choco Mocha Mousse

2 cups raw cashews
2 tbsp Vega Shake & Go Smoothie – Choc-a-lot
1 shot free-trade espresso
2 tbsp cocoa powder
3 tbsp coconut sugar
⅓ cup water
1 tsp vanilla extract
1 tbsp ground chia seeds
Add all ingredients – except ground chia – to a high power blender and slowly blend using the plunger to help mix the batter. You may need to add more water depending on consistency, but the batter should be thick. Finally, blend in the ground chia, incorporating well. Spoon out into serving cups. Refrigerate for at least two hours.
