Avocado Salad

Avocado Salad

Avocados are a rich source of vitamin A and potassium. There are many healing properties with apple cider vinegar. Use organic avocados and ingredients whenever possible. This is a great summertime dish.

Serves 2


1 medium-sized avocado
1 teaspoon of lemon juice (to keep avocado from oxidizing)
1-2 vine-ripened tomatoes, diced
1 diced orange or yellow bell pepper
1/4 medium-sized Vidalia onion chopped, or three chopped green onions
3 Tablespoons apple cider vinegar
1 Tablespoons olive oil

 

- Chop the avocado into even-sized cubes and sprinkle immediately with lemon juice
- Add in tomatoes, onion and bell pepper
- In a separate bowl, mix oil and vinegar with a fork to combine, then pour over salad
